Starfruit/Passionfruit Sago Swirl Panna Cotta

Materials
Glasses
Immersion Blender or food processor
Sieve
Ingredients
1 quart heavy cream
1/2 cup sugar
1/2 vanilla bean, split lengthwise, seeds scraped
2 1/4 teaspoons unflavored powdered gelatin
3 tablespoons water
2 starfruit
seeds removed and diced
2 passion fruits
¼ tsp salt
4 cardamom pods
Honey
Sago
Pomegranate seeds
Procedure
Make ~½ cup dry sago according to package directions
Steep milk in saucepan with cardamom pods
Add sugar, salt, cornstarch
Make mango and starfruit purees
Pour into molds (tilt to make space-theme shape, see image), mix 2-3 tbsp of sago into the milk mixture, chill overnight
Layer puree with panna cotta to make galaxy swirl
Next day, make second batch of sago (maybe ~1 cup dry?)
Mix sago with honey and some passionfruit juice so they don’t clump together
Top panna cotta with sago, individual passion fruit seeds, slice of starfruit
Other possible toppings: crunchy granola-like bits, pomegranate seeds, freeze-dried strawberry
Other possible fruits to use: mango
