Starfruit/Passionfruit Sago Swirl Panna Cotta

Materials

  • Glasses

  • Immersion Blender or food processor 

  • Sieve

Ingredients

  • 1 quart heavy cream

  • 1/2 cup sugar

  • 1/2 vanilla bean, split lengthwise, seeds scraped

  • 2 1/4 teaspoons unflavored powdered gelatin

  • 3 tablespoons water

  • 2 starfruit

    • seeds removed and diced

  • 2 passion fruits

  • ¼ tsp salt

  • 4 cardamom pods 

  • Honey

  • Sago 

  • Pomegranate seeds

Procedure

  1. Make ~½ cup dry sago according to package directions

  2. Steep milk  in saucepan with cardamom pods

  3. Add sugar, salt, cornstarch

  4. Make mango and starfruit purees

  5. Pour into molds (tilt to make space-theme shape, see image), mix 2-3 tbsp of sago into the milk mixture, chill overnight 

    1. Layer puree with panna cotta to make galaxy swirl

  6. Next day, make second batch of sago (maybe ~1 cup dry?)

  7. Mix sago with honey and some passionfruit juice so they don’t clump together

  8. Top panna cotta with sago, individual passion fruit seeds, slice of starfruit

    1. Other possible toppings: crunchy granola-like bits, pomegranate seeds, freeze-dried strawberry 

    2. Other possible fruits to use: mango
