Tavar Khorovats-inspired platter, with hacho-yogurt dip and lavash, and pomegranate apricot garnish

Ingredients (4 servings):

Marinade 

(Spices) 

  • Coriander ground

  • Aleppo pepper

  • Garlic

  • Black pepper

  • Pomegranate juice/molasses 

  • Salt

  • Lemon 

(Optional)

  • Blackened veggie powder

  • Refined olive oil

Meat 

Beef sirloin steak tips         1/3 lb per person

Veggies

Tomatoes             ⅙ of meat

Purple Onion            ⅙ of meat

Yellow bell pepper            ⅙ of meat

Fresh herbs: parsley for garnish

Lavash

Tomato (Hacho) reduction + yogurt

(Etc.)

Dried fruit: apricots

Fresh pomegranate seeds on top

Lavash from Armenian bakery

Garnish w fresh herbs

Procedure:

  1. Marinate meat overnight (RnD without marinating)

  2. Soak wooden skewers in water and set aside (20 minutes)

  3. Salt, lemon, and oil veggies

  4. Cover meat in refined oil, blackened veggie powder before broiling on skewers with veggies in between

  5. Plate as desired

  6. Make lecho sauce and swirl over yogurt, serve on side
